Mom's Meatloaf

This is one of my favorite Sunday dinners. It makes a lot and is very filling. I usually make mashed potatoes to go along with it because the sauce makes a different sort of gravy.

1 lb. ground beef
1 lb. ground turkey
1 package shredded mozzarella cheese
1 egg
a handful of oatmeal
1 can of Campbells tomato soup
1 small can of tomato sauce

Preheat over to 350 F

In a large bowl, mix together the ground beef and the ground turkey. Add the egg and the handful of oatmeal. Mix well.

Place a sheet of wax paper on the counter top and place the meat mixture on it. Using a rolling pin, roll it out to about 3/4 inch thick in the shape of a rectangle. Spread the shredded mozzarella cheese onto the meat mixture. Carefully roll the meat mixture up. Press down on the edge and the sides to keep the cheese in. Place it, seam side down, in a roaster pan.

In a small bowl, mix the tomato soup and the tomato sauce together. Pour evenly over the loaf. Cover and bake for one hour.
